fresh herb salad.jpgAbout 5 years ago I hated salads, it was the least fulfilling meal I could eat, the plate didn’t come out steaming, and to me, they all tasted the same because I used ranch dressing on everything.  In fact I used to think that salads were so bland that I would go overboard with the ranch which turned out to be a bad idea because it was pretty high in fat.  I can’t stand the taste of other generic salad dressings I found in the grocery store and couldn’t stand fat-free ranch either so I basically stopped eating salads for a while.  Lately I’ve been eating more salads and I absolutely love it now, I think it’s because I’ve fallen in love with the new dressings I use.

My favorite dressings are the Sesame Ginger Dressing and the Simple Balsamic Vinaigrette.  I used to buy the sesame giner dressing stores but now I’ve found a recipe that is pretty similar to what I buy and tastes awesome.  I use these dressings on my herb salads all the time, I don’t think I can get sick of this stuff.

Sesame Ginger Dressing Recipe

  • 1 cup minced onion
  • 1 cup peanut oil
  • 3 tablespoons sesame oil
  • 2/3 cup rice vinegar
  • 1/4 cup green tea or water
  • 1/4 cup minced fresh ginger
  • 1/4 cup minced celery
  • 2 tablespoons soy sauce (low sodium type)
  • 1 tablespoon sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon minced garlic
  • 1/4 teaspoon freshly ground black pepper
  • 2-3 tablespoons sesame seeds
  • few drops of chili oil (for those who love spicy)

Put all the ingredients in a food processor and blend.

Simple Balsamic Vinaigrette (low fat)

  • 1/4 cup balsamic vinegar
  • 1 tablespoon chopped garlic
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 3/4 cup olive oil

Put all the ingredients in a bottle and shake until the salt dissolves.
