Grilled Orange Chicken Breasts
Recipes April 4th, 2006This is one of those recipes that you can make in batches so that future preparation is quick and easy. Actually this recipe itself is already pretty easy to do and tastes great. The grill orange chicken is low in calories and still packs a punch on taste. I usually do these on my lovely George Foreman Grill that I’ve had ever since my freshman year in college.
Ingredients:
- 3 chopped orange segments
- 1/4 cup orange juice (no pulp)
- 1/4 cup extra virgin olive oil
- 2 tsp lime juice
- 3 garlic cloves, minced
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1 tsp salt
- 1 tsp black pepper
- 1 lb boneless skinless chicken breasts
Instructions:
Put all ingredients into a zip-loc bag to mix and massage the chicken a little. Put the bag in the refrigerator for about an hour. When you take out the bag, simply place the chicken breasts on your grill for about 6 to 8 minutes while turning. When you see some clear juices running that means the chicken is done just right, juicy and moist.
If you want to do a large batch of this, just make a bunch of chicken breasts and put them in zip-loc and store them in the freezer. Take them out and when they’re thawed it’s pretty much automatically marinated.
