So I came home this weekend to visit Mom and just like always, we will have dinner that’s completely against my regular diet. I haven’t been to the gym in over a week and have been trying to avoid high calorie and high fat diets. Guess what Mom has cooked up for dinner tonight? Pig’s feet.

Pig’s feet is actually pretty tasty (if you can stomach the appearance), but when you look at the bottom of the pot that it’s cooked in and you see a quarter inch of grease floating on the top layer, you *know* you shouldn’t eat this more than twice a year.

What makes the pig’s feet so tasty you ask? Well for starters, it’s full of fat. Most of the flavor from this dish comes from the layer of fatty skin that wraps around the small amount of meat that surrounds the bone. The skin on pig’s feet is about 5 times thicker than chicken skin and is quite chewy. Since it’s cooked in soy sauce, the flavor is thoroughly soaked into the meat and skin, making the pig’s feet a flavorful dish to have with white rice.
